Yum

Yesterday I made Rolo Cookies for the first time. They were not only delicious, but incredible easy to make because the of Devil's Food Cake mix you use instead of cocoa powder, flour, baking soda, etc. Sandra Lee would be so proud...

Rolo Cookies

Devil's Food Cake mix
1/3 c. oil
2 eggs
Bag of Rolos

Mix cake mix, oil, and eggs. Take unwrapped Rolo, push inside about tablespoon of dough and roll in hands forming a ball.

Bake @ 350 degrees for 9 minutes

I'm Back!

I've missed you and your comments, readers!

I realize now I probably shouldn't have stopped blogging cold-turkey after the mood of my last post; I seem to have worried some of you... But no worries--I'm quite possibly the happiest I've ever been in my short 20 years.

Here's what I've been up to these past few months:

*Papers, midterms, presentations, and FINALS (yuck!)
*Spent Christmas at home with mia famiglia
*Took a trip to beautiful Dana Point, CA
*Started another school semester with new classes
*And last, but most certainly not least...

Il futuro è rosa - the future is pink

Sorry posts have been a little sparse these past couple of weeks. Until the school work lightens up, I'm afraid blogging will have to take a back seat.

Shall we dance?

This is my favorite scene from the delightful film "Shall We Dance," starring Richard Gere and Jennifer Lopez.

After seeing this movie (before all the "Dancing with the Stars" craze, mind you) I knew I had to learn how to ballroom dance. Lucky for me the university I attend has a world-renowned ballroom dance team, and thus offers many dance classes.

Last year I took my first class and learned the waltz, quickstep, and tango (my personal favorite). I've been dancing ever since! Next semester I'm taking Latin ballroom (cha cha, rumba, and paso doble) and I can't wait!

Is there something you've always wanted to do but are afraid to try? I say go for it--what have you got to lose?! We are never too old to start learning...
